Endo Antibotrytis

Endozym Antibotrytis is an enzymatic preparation with secondary activities useful to solve problems deriving from the presence of Botrytis cinerea on grapes.

This enzyme directly acts on polyphenoloxidases present in must, inactivating them and enabling to preserve both aromatic precursors and coloring matter.

The laccase present in mold-attacked grapes has a very low specificity, it solubilizes and spreads in the medium, builds stable complexes with solid particles and acts on the solid-liquid contact surface. The enzymatic oxidation of anthocyanins carried out by laccase rapidly destroys grape coloring matter and, when suitable defenses are missing, definitively destroys its structure.

The action carried out by Endozym Antibotrytisis determinant in grapes heavily attacked by grey mold, responsible for problems which can not be solved either by the only sulfur dioxide or by other technological solutions.

Endozym Antibotrytissolves the problems deriving from the presence of mould on grapes and grants the correct vinification run; the final quality of the obtained wines is preserved by the effectiveness of the suggested innovative formulation.

The positive action of the pectolitic enzyme is clearly shown even by the strong ß-glucanasic activity, enabling to disgregate glucans and therefore to facilitate the clarification of musts/wines and their following filtration.
